Baked Parmesan Pumpkin Fries


You will need:

1 medium pumpkin

2 teaspoons olive oil

1 teaspoon of paprika

1 teaspoon of garlic powder

3 tablespoons of grated parmesan cheese

¼ cup of minced, fresh parsley


How to make:

-Slice the pumpkin in half and in half again.

-Scoop out the seeds and pulp.

-Slice the pumpkin into smaller pieces, cutting or peeling off the skin.

-Cut into small fries and soak in a bowl of water (or beer for a naughty treat) for at least 30 minutes.

-When the time is up, pat the fries dry with a towel.

-Place the fries into a bowl and drizzle with olive oil.

-Sprinkle on the paprika and garlic powder then toss with your hands.

-Lay the fries out, spaced evenly on a baking tray and cook at 220 degrees for 10-15 minutes.

-Sprinkle on the parmesan as soon as they come out of the oven and serve immediately.



Pumpkin Cookies

You will need:

2 cups of gluten free quick oats

1 cup of pumpkin (not pumpkin pie filling)

¼ cup of granulated sweetener of choice

Pinch of cinnamon OR handful of nuts (optional)


How to make:

-Lightly grease a baking tray.

-In a large mixing bowl, combine the oats, pumpkin and granulated sugar of choice. (Add an optional knob of butter)

-Using your hands, mould into small balls and place on a baking tray. Press each ball flat and top with (optional) nuts/cinnamon.

-Place in a preheated oven (180 degrees) and cook for 10-15 minutes.

-Remove from oven and allow to cool completely before serving.



Instead of throwing away the pumpkin seeds, keep for later and pour heated caramel (a lot more gooey this way) over the top, for a sweet and salty snack. Allow to cool before serving. Enjoy in (VERY) little portions as this will be high in sugar!
